My mother-in-law has made homemade noodles for years and everyone always thought they were delicious. She always said they were easy. It took me 20 years before I even tried. Guess what? They are so easy, faster than going to the store to buy noodles.
Mix together the following 5 ingredients in mixer with hook or by hand and knead a little.
- 2 1/3 cups of flour (I prefer sprouted Spelt or Young Living Einkorn )
- 1/2 tsp sea salt
- 1/3 cup water
- 2 beaten eggs
- 1 tsp olive oil.
Make sure to flour a surface and roll the dough out to the thickness you desire. Use a noodle cutter or a pizza cutter to cut out your noodles- fat or thin is completely up to you. Throw your homemade noodles in boiling chicken broth and simmer with lid 20-25 minutes.
